Big Salad & Cheesy Garlic Toast

I love easy dinners and you can't much easier than this one. I will chop up a head of lettuce and add some chopped up cucumber, green pepper, grape tomato, and shredded cheese. I would add some red onion too, but I am out. Plus, I will make some cheesy garlic toast (the frozen kind) in the toaster oven - voila! That's it folks.

It is another beautiful day here, once again about 75 degrees and sunny with that same cool breeze. I am enjoying it while I can because tomorrow is supposed to be rainy, and then over the weekend the temp is supposed to shoot up into the 90's - blech!

I don't know if any of you followed the story about Laura Ling and Euna Lee, the two journalists who were captured in North Korea, but I am sure you have recently heard of their return which was procured by former President Clinton. I must admit, I had tears in my eyes when I saw Euna get off the plane and grab her daughter and hug her and not let her go; it was a very touching moment. However, the fact that she would put herself in the dangerous position of being so near the border of North Korea, which is notorious for it's harsh regime, when she had a small child at home did not occur to me until I read about it over on Buried With Children. It is an excellent post and challenges the reader to think about what and how much we are willing to sacrifice for our children and our careers.

  1. dinner sounded yummy! it is such a struggle that gets harder sometimes as the years go by with career versus children. when my mom had us, it was just assumed that she would stay home to raise us, but that was in the 1950s/1960s. Now moms have that dilemma, do I return to work, do I concentrate on children and put my career on hold, etc. If Euna Lee knew when she was working on this assignment that she would not see her daughter for this long of a period of time, I bet she would have chosen differently in accepting it. But we just never knew and that is why there will always be that dilemma........so thankful though that they are home safe and sound

  2. I was so happy to hear that they were released, what a horrible thing- from anyone's perspective, but especially a mothers.
