Chicken Pattie Sandwiches

The weather has been gorgeous this weekend! Sunny and 70 - I love Indian summer! And what did I spend it doing? Making cookies. Cleaning the house. Doing laundry. But I had the windows open the whole time! lol

I used the Nestle Tollhouse cookie recipe that can be found on the chips packaging. I made a double batch and used one bag of milk chocolate chips and one bag of white chocolate chips. They came out great!

I am glad the weather will getting cooler again soon because I have a few "warm weather" meals to cook. This weeks meal plan is: Kathy's Roast with Veggies, Pork Chops with Spanish Rice, Italian Beef Sandwiches, Spaghetti with Garlic Toast, Breakfast, and Shepherds Pie (still).

Tonight I will be making Chicken Pattie Sandwiches, which are just what they sound like: chicken patties cooked in the oven, served on hamburger buns with lettuce, mayo, and tomato. I will make a Lipton Butter & Herb Pasta Sides to go with, along with some salad.

  1. The cookies sound really good, wish we had some of that sunshine here, I drove home last night through rain sleet and snow for 5 hours, yuck! But I am home and happy :)

  3. We had beautiful, warm weather here, too. I'm still sick, so I didn't get to enjoy it very much, though.
