Egg Salad

Can you believe that I have never had egg salad? Today I made it for the first time and I will eat it tomorrow for the first time. The recipe says to let it sit in the fridge overnight before eating it, but I did lick the spoon after mixing it and it tastes wonderful! I got the recipe from and you can get it here or just keep reading. I read some of the reviews and changed it a little based on the comments and based on what I know I like, so this my version.

8 hard boiled eggs, chopped
3/4 cup mayonnaise
1/2 tsp. salt
1 tsp. mustard powder
3 tbsp. onion, finely minced
1/4 tsp. pepper
1/4 tsp. garlic powder
1 tsp. dill weed
1/3 cup celery stalks (& some leaves), finely diced
1/4 tsp. paprika

In a bowl, gently mix all ingredients. Cover and refrigerate for 8 hours or overnight.

I have heard that celery leaves have good flavor and my mom always threw some in her dishes, so I do it too. Has anyone actually eaten the leaves to see what they taste like? I will have to try it next time I cut up celery! :)

Today I was doing some shopping at Target and needed mayo. I usually buy Kraft in the squeeze bottle unless something else is on sale. At Jewel (our big chain grocery store) the mayo prices are unbelievably high, even for the store brand. Anyway, I found the aisle and scanned the shelves prices and reached for the 24 oz. bottle which was priced at $2.54. I looked up slightly at the 18 oz. bottle and noticed that the price for that one was $2.89! Can you believe that? The smaller bottle cost MORE than the big bottle! Very strange. But it just goes to show that we should all pay attention to what we are buying.

Happy eating!

  1. Wow, the small one costs more? I wonder if it packs more of a punch?

I am not an egg fan so I'll have to pass on your egg salad recipe. Everything else actually looks pretty good, just the eggs kinda ruin it for me.

Eggs by the way are also on Mrs. LB's hate list. We have a hard time finding things to eat when we go out to breakfast.

  2. We all love egg salad here! I just use onions, celery (and leaves), salt, pepper and mayo. I find if I use the mustard, everyone says it tastes like deviled eggs and not egg salad. I hope you like it!

Whenever the grocery store has a sale on mayo, I always buy a few because it is so expensive and I do like the Hellman's brand. In summer when I make a lot of salads, I buy the big bottle at BJ's.

  3. I can't believe you made it this long in your life without eating egg salad! I love it. And this on my diet I can have! I have eaten celery leaves before and they are okay, if I remember correctly a bit bitter but not bad

    enjoy the egg salad!!

  4. I love egg salad! I don't make it that often, but now I'm about to have some for lunch, so thanks for the inspiration!! : )
and I love celery, I put it in almost everything, and I love adding the inner stalks with all the leaves too. The little ones are sweeter than the dark ones on the outside of the stalks.
I hope you enjoy your salad AND your weekend! : )

  5. Egg salad is a big hit around my house, I can't wait to try this recipe :)

  6. I've never had egg salad either, but this recipe sounds yummy. My guinea pigs always liked celery leaves :)

  7. My husband loves egg salad. I've never had it. I've never made it. I'm not much of an egg fan, even though I used to eat scrambled eggs every day after school when I was in Middle School. Maybe I've had my lifetime quota.

  8. You totally inspired me and I had to go make some egg salad, I had some yesterday and am planning on some again for lunch today :)

  9. I can't believe you had never had egg salad! hehehe. Guess it is just one of those things. Joel loves it. I can take it or leave it. Hope you liked it!!
